Description
This official Dalmore, a 33 year old, from 1978, at 46%, 477 bottles in all. Dalmore is a rich, marmalade and dark chocolate Highland single malt of real opulence. Water comes from the River Averon, drawn from Loch Morie in the hills above.
Run through the distillery's unusual flat topped and water jacketed stills, giving the thick, oily spirit that drinks sherry so well. A Pedro Ximenez cask added raisin, date, fig and a treacle sweetness. At a great, fragile age oxidation rules, sotolon lending maple and old oak as leather, coffee and dark chocolate linger. An aged Oloroso cask suits the rich spirit, dried fruit and chocolate meeting the oily weight. It is owned by Whyte and Mackay, and its King Alexander III bottling nods to the clan legend. The cool Highland air on the firth gives a slow, even maturation.
At 46% it is gentle, sweet and fruity. Orange, dark chocolate and dried fruit, with dried fruit, chocolate and orange from the cask. The mouthfeel is heavy, the fruit carried on a rich, malty body. A full, sherried finish ends on orange and dark chocolate. This is one of the Highlands' most opulent single malts.
