A Dailuaine of a 13 year old chosen by the bottler Jewish Whisky Company, distilled in 2010, from cask 310988, bottled at 53.4%, one of 270 bottles. Dailuaine was founded in 1852 by William Mackenzie, and was the first distillery to wear the pagoda roof. It had its own railway siding and a little locomotive, Dailuaine No.1, known as the Puggy.
It was distilled for the heavy, full bodied spirit Dailuaine is known for, for a rich, meaty make that suits sherry wood. An Oloroso hogshead lent fig, raisin and a savoury, nutty depth, the heavy spirit soaking it up. By the integrating teens congeners fade and esters build, the rich, full bodied spirit growing rounder. Years in oak round the spirit, the fruit deepening to dried fruit and a savoury spice. Maturation in the cool north east keeps the rich spirit balanced over the years. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt.
At 53.4%, undiluted, it is deep and fruity. Baked fruit, fig and a savoury depth, with dried fruit, fig and walnut from the cask. Soft orchard fruit and a rich malt sit behind the cask. It finishes robust, malty and warm. This is the robust, sherried malt of Carron.
