Description
A 9 year old Caol Ila from the Pitlochry bottler Signatory Vintage, bottled at 57.1%. Caol Ila is the most heavily bottled of all the Islay malts. It was founded by Hector Henderson and later passed to the Distillers Company.
Made from medium peated malt for a clean, smoky spirit, for a clean, coastal, oily make. An Oloroso hogshead lent raisin, fig and a savoury edge. In its extractive youth the spirit takes vanillin vanilla and lactone coconut quickly, the peat phenols vivid and lemony. A gentle vanillin sweetness from the oak balances the coastal phenols. Sea air works into the maturing casks, lending a briny, coastal lift. Active wood frames the smoke without smothering the citrus beneath. A clean smoke and a coastal salt define the distillery style. Time in oak deepens the oily body while the maritime smoke stays bright.
Bottled at a cask strength 57.1%, it is intense. Smoked lemon, brine and a green olive note, with dried fruit, fig and walnut from the cask. An oily smoke coats the palate, citrus and brine behind. The close is long, smoke over a citrus lift. This is a clean coastal malt with a lemony peat.
