Description
The Pitlochry bottler Signatory Vintage released this Caol Ila, a 10 year old, distilled in 2014, bottled at 57.1%. Caol Ila is the largest distillery on the Isle of Islay. Its spirit also feeds blends such as Bell's and Black Bottle.
The spirit was distilled slowly from peated malt for a refined island smoke, for a smoky spirit with a citrus lift. An Oloroso hogshead lent raisin, fig and a savoury edge. By the integrating teens harsher congeners fade and ethyl esters build, lending a riper citrus over the softening peat. Sea air works into the maturing casks, lending a briny, coastal lift. A gentle vanillin sweetness from the oak balances the coastal phenols. The clean, oily spirit takes cask flavour well while holding its citrus and smoke. The clean, lemony smoke has made it a favourite of blenders for generations.
At 57.1% without water it is rich and full. Smoked lemon, brine and a green olive note, with dried fruit, fig and walnut from the cask. An oily smoke coats the palate, citrus and brine behind. Lemon, soft ash and sea salt see it out. This is the elegant, lighter side of Islay.
