Description
A Caol Ila of a 7 year old chosen by the Pitlochry bottler Signatory Vintage, distilled in 2013, from cask 325558, bottled at 61.6%, one of 268 bottles. Caol Ila is one of the largest malt distilleries in all of Scotland. A ferry crosses the Sound from Port Askaig to Jura and the mainland.
Made from medium peated malt for a clean, smoky spirit, for a smoke more elegant than heavy. An ex-Bourbon barrel gave a gentle sweetness and a creamy edge. At an extractive age eugenol lends a clove note and oak lactones a coconut sweetness, the guaiacol smoke bright and fresh. Cool, damp warehousing slows the loss of the angel's share over the years. The six tall stills sit behind picture windows looking out to Jura. Active wood frames the smoke without smothering the citrus beneath. Diageo's Special Releases have featured both peated and unpeated Caol Ila.
At a full 61.6% it is bold and oily. A clean maritime smoke with lemon and brine, with a touch of vanilla and toffee. Smoke, lemon and a saline minerality fill the middle. The finish runs oily, smoky and clean. This is one of the most versatile of the Islay malts.
