Drawn by the Pitlochry bottler Signatory Vintage, a 17 year old Caol Ila, at 57.7%. Smoke, sea spray and an oily lemon fill the glass, with dried fruit, fig and walnut from the cask. Bottled by independents the world over, and by Diageo itself. The spirit is matured largely on the mainland. This is a coastal Islay malt of real finesse.

Description
The Pitlochry bottler Signatory Vintage selected this Caol Ila, a 17 year old, distilled in 2007, from cask 6, bottled at 57.7%, one of 677 bottles. Caol Ila sends more spirit to independent bottlers than almost any malt. A ferry crosses the Sound from Port Askaig to Jura and the mainland.
Worked from peated malt for the lighter Islay style, for the clean island smoke prized by blenders. A first fill sherry cask drove a deep, figgy, nutty character. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, structured grip, the smoke now mellow. The tall stills and a high cut give a lighter, cleaner spirit than the southern Islays. Phenols from the peat smoke carry the medicinal, lemony edge through the years. Most of its peated malt is destined for the Johnnie Walker blends.
Bottled at a cask strength 57.7%, it is intense. Smoke, grapefruit and a maritime salt, with dried fruit, fig and walnut from the cask. Smoke, lemon and a saline minerality fill the middle. A long, briny finish ends on lemon and soft smoke. This is a refined, citrus driven Islay smoke.
