Description
A 15 year old Caol Ila, this distilled in 2007 from the Pitlochry bottler Signatory Vintage, from cask 4, bottled at 58.4%, one of 687 bottles. Caol Ila is an Islay malt of clean, oily, citrus driven smoke. Diageo's Special Releases have featured both peated and unpeated Caol Ila.
It was distilled slowly from peated malt for a refined island smoke, for the clean island smoke prized by blenders. A sherry cask gave dried fruit and a dark, nutty sweetness. Through oxidative maturity the phenols mellow and esters concentrate, citrus turning to candied lemon over a soft peat. Long ageing turns the young, sharp peat into a soft, coastal smoke. The spirit's high notes of lemon and grass survive even long maturation. The malt is medium peated, giving a cleaner smoke than the south shore Islays. Maturation by the sea gives the malt its mineral, sea spray character.
At 58.4%, undiluted, it is bold and clean. Peat, smoked fish and a citrus oil, with dried fruit, fig and walnut from the cask. Smoked lemon and sea salt build over an oily body. A long, briny finish ends on lemon and soft smoke. This is one of the most versatile of the Islay malts.
