Its tall stills give a lighter, cleaner island spirit. Bottled by independents the world over, and by Diageo itself. This is an Islay malt of clean smoke and bright citrus.

Description
From the Pitlochry bottler Signatory Vintage, a 12 year old Caol Ila, distilled in 2006, from cask 311566, bottled at 56.7%, one of 246 bottles. Caol Ila is prized for a smoke that leans to lemon and olive oil rather than tar. It was founded by Hector Henderson and later passed to the Distillers Company.
Here the spirit was worked from peated malt for the lighter Islay style, for a clean, coastal, oily make. A refill bourbon hogshead held it, keeping the distillery character to the fore. Through integration the spirit and cask settle, lactone coconut and a soft vanillin balancing the easing phenols. Years in oak round the smoke, the peat mellowing while the brine stays. Malt comes from the Port Ellen maltings on the south of the island. The clean, oily spirit takes cask flavour well while holding its citrus and smoke. Its spirit also feeds blends such as Bell's and Black Bottle.
At a hearty 56.7% it carries real weight. Sea spray, smoke and a citrus lift, with honeyed oak underneath. Smoke, lemon and a saline minerality fill the middle. The finish is long, smoky and citrussy. This is a lemony, coastal Islay single malt.
