Bottled by independents the world over, and by Diageo itself. One of the largest malt distilleries in all of Scotland. This is one of the most characterful of the Islay malts.

Description
A 34 year old Caol Ila from the Pitlochry bottler Signatory Vintage, from cask 6496, bottled at 50.6%, one of 230 bottles. Caol Ila takes its name from the Gaelic for the Sound of Islay. Most of its peated malt is destined for the Johnnie Walker blends.
Here the spirit was distilled in tall stills that lend the smoke an oily lightness, building a refined, maritime peat. A long spell in ex-Bourbon oak rounded the spirit gently. At an ethereal, fragile age the spirit turns delicate, sotolon lending a maple and old oak depth as beeswax and a ghost of smoke linger. Sea air works into the maturing casks, lending a briny, coastal lift. The medium peating leaves a smoke that is firm but never heavy. The six tall stills sit behind picture windows looking out to Jura. The lighter style means the cask and the citrus speak alongside the peat.
At 50.6%, undiluted, it is bold and clean. Smoke, grapefruit and a maritime salt, with a light bourbon sweetness. Beneath the smoke run lemon, brine and a peppery oil. Smoke and sea salt see out a long finish. This is an Islay malt that wears its smoke lightly.
