A 10 year old Caol Ila from the bottler La Maison du Whisky, bottled at 48%, one of 2139 bottles. Caol Ila is prized for a smoke that leans to lemon and olive oil rather than tar. The distillery was expanded again in the 21st century to meet blend demand.
Distilled from medium peated malt in tall copper stills, for the light, maritime smoke Caol Ila is known for. A sherry butt held it, the wood lending raisin and walnut. Through integration the spirit and cask settle, lactone coconut and a soft vanillin balancing the easing phenols. Cool, damp warehousing slows the loss of the angel's share over the years. The clean spirit shows the cask clearly, which is why it suits so many wood types. The peat here is medium rather than heavy, so fruit and smoke share the glass. Phenols from the peat smoke carry the medicinal, lemony edge through the years.
Undiluted at 48%, it is powerful. A clean maritime smoke with lemon and brine, with dried fruit, fig and walnut from the cask. An oily smoke coats the palate, citrus and brine behind. The finish runs oily, smoky and clean. This is a maritime, lemony Islay single malt.
