Description
A Caol Ila drawn by Sukhinder Singh's Elixir Distillers, distilled in 2009, from cask 319090, bottled at 59.8%, one of 308 bottles. Caol Ila is among the most widely traded of Islay's single malts. A few weeks each year the distillery runs an unpeated, Highland style spirit.
Here the spirit was worked from peated malt for the lighter Islay style, giving a bright, citrus driven peat. Years in ex-Bourbon wood lent a soft vanilla and a coastal calm. Across the integration years the smoke loses its edge as esters and vanillin weave into a smoother, citrussy whole. Cool, damp warehousing slows the loss of the angel's share over the years. The spirit's high notes of lemon and grass survive even long maturation. Its peated character is built on malt smoked to a medium level of phenols. The oily texture comes from the spirit cut, the cask adding depth around it.
At 59.8%, undiluted, it is bold and clean. Smoke, grapefruit and a maritime salt, with a creamy oak note. The oily body carries the smoke long and clean. Smoke and sea salt see out a long finish. This is a clean, smoky Islay single malt from Caol Ila.
