    This official Tomatin single malt, aged 1990 & 2011 from 1990, drawn from cask 14270 + 23 and bottled at 56.1%. A release of 514 bottles. Set in the Highland hills south of Inverness, Tomatin has made single malt since 1897. A very long fermentation, among the longest in Scotch, builds the fruity character.

    Worked through onion stills for a light, fruity spirit, for the soft, fruity Highland make Tomatin is known for. A wine cask shaped it, the fruit meeting the soft spirit. Decades leave it deep and gentle, candied fruit and a waxy honey with great age. Refill oak lets the fruity Tomatin character lead, apple over honey. Special releases like Decades and Warehouse 6 have marked the distillery's milestones. Cold, clean water runs down to the distillery from the hills above. Under Japanese stewardship the focus turned from sheer volume to quality. The very long fermentation is central to the distillery's fruity character.

    At cask strength 56.1% it is full bodied. A mellow, fruity character, and the wine cask lends red berry and a dry spice. A baked apple and a gentle spice lift it. It finishes soft, fruity and clean. This is the softer side of the Highlands.
