    This Tomatin, an official release, aged 30 year old and bottled at 43%. Just 800 bottles were filled. Tomatin is a Highland single malt distilled in the hills south of Inverness, where the distillery was founded in 1897. The core is unpeated, with peated spirit made one week a year and bottled as Cu Bocan.

    The spirit was distilled slowly for the soft, fruity Tomatin make, building the approachable Tomatin style. A refill bourbon cask held it, keeping the fruit to the fore. At this great age the malt is full and mellow, the fruit deep and the oak soft. The slow loss of the angel's share concentrates the fruity, malty core over time. For most of its life the distillery rarely ran to its full capacity. The make is light and fruity, easy to like and easy to drink. Special releases like Decades and Warehouse 6 have marked the distillery's milestones. Cold, clean water runs down to the distillery from the hills above.

    At 43% it is smooth and fruity. Apple, vanilla and a light spice, and honeyed vanilla comes through from the ex-Bourbon. Beneath it run apple, pear and a soft spice. It closes soft, fruity and warm. This is Tomatin, the fruity Highland malt.
