Description
An official Tomatin single malt, a 25 year old release from 1978 and bottled at 43%. Tomatin, founded in 1897 in the Highland village of the same name, was once Scotland's largest malt distillery. Cu Bocan takes its name from a spectral hound said to haunt the Tomatin hills.
Drawn off copper pot stills fed by the burn of the deer, for a soft, apple and pear scented spirit. Maturation came in ex-Bourbon wood, with vanilla and a soft apple. Past twenty years the spirit turns honeyed and full while staying soft. The mellow make leans on the cask for much of its colour and flavour. For most of its life the distillery rarely ran to its full capacity. The make is light and fruity, easy to like and easy to drink. Special releases like Decades and Warehouse 6 have marked the distillery's milestones. Cold, clean water runs down to the distillery from the hills above. Under Japanese stewardship the focus turned from sheer volume to quality.
Bottled at 43%, it is rounded. A soft, fruity sweetness, and the refill bourbon lends a quiet vanilla. The texture is soft and round, the fruit lifted by honey. The finish runs gentle, fruity and mellow. This is a fruity Highland single malt from the Monadhliath hills.
