Description
This official Tomatin single malt, aged 11 year old from 2014, drawn from cask 54345 and bottled at 59.1%. Tomatin is a Highland single malt distilled in the hills south of Inverness, where the distillery was founded in 1897. A very long fermentation, among the longest in Scotch, builds the fruity character.
Worked through onion stills for a light, fruity spirit, for the soft, fruity Highland make Tomatin is known for. It was matured in ex-Bourbon oak, lending vanilla and a soft honey. Younger here, it keeps a light, fruity freshness over soft honey. Refill oak lets the fruity Tomatin character lead, apple over honey. The make is light and fruity, easy to like and easy to drink. Special releases like Decades and Warehouse 6 have marked the distillery's milestones. Cold, clean water runs down to the distillery from the hills above. Under Japanese stewardship the focus turned from sheer volume to quality.
At 59.1%, undiluted, it is deep and fruity. A mellow, fruity character, and ex-Bourbon oak gives vanilla and a light apple. A baked apple and a gentle spice lift it. It finishes soft, fruity and clean. This is the softer side of the Highlands.
