    An official Tomatin single malt matured to 12 year old from 2010, drawn from cask 37857 and bottled at 57.4%. Founded in 1897 high in the Monadhliath hills, Tomatin makes a soft, fruity Highland single malt. A very long fermentation, among the longest in Scotch, builds the fruity character.

    Drawn off copper pot stills fed by the burn of the deer, for a soft, apple and pear scented spirit. Ex-Sherry wood added a dried fruit richness to the soft make. By this age the soft spirit rounds into orchard fruit and a gentle oak. The mellow make leans on the cask for much of its colour and flavour. The very long fermentation is central to the distillery's fruity character. The distillery sits beside the A9, the old road north to Inverness. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond. Tomatin stands at over three hundred metres, among the highest in the land.

    At its natural 57.4% it is concentrated. A soft, fruity sweetness, and the Pedro Ximenez lends raisin, date and treacle. The mouthfeel is soft, the fruit carried on a mellow body. A long, honeyed finish carries a fruity lift. This is a gentle, fruity Highland single malt.
