Description
An official Tomatin single malt, a 25 year old Highland malt from 1988 and bottled at 46%. A release of 2500 bottles. Set in the Highland hills south of Inverness, Tomatin has made single malt since 1897. Today it works twelve stills, having shifted from blend volume to single malt.
The spirit was made in copper stills from unpeated barley, for a fruity, mellow make. An unusual cask gave it a distinctive, fruity character. At this age it is rounded and mellow, the fruit folded into a honeyed body. Sherry wood suits the soft make, lending dried fruit and a nutty depth. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond. Tomatin stands at over three hundred metres, among the highest in the land. An old cattle drovers' road ran through Tomatin, and whisky was made here long before the distillery. The arrival of the Highland Railway in the 1890s made the distillery possible.
At 46% it is gentle, fruity and mellow. Pear, honey and a malty note, and the Port cask adds plum and red berry. The texture is soft and round, the fruit lifted by honey. The finish runs gentle, fruity and mellow. This is a fruity Highland single malt from the Monadhliath hills.
