    A distillery bottling of Tomatin matured to 15 year old from 2003 and bottled at 46%. Only 6000 bottles were released. Tomatin is a Highland single malt distilled in the hills south of Inverness, where the distillery was founded in 1897. Tomatin malt long fed blends such as The Antiquary and The Talisman.

    It was drawn off copper pot stills fed by the burn of the deer, for a soft, apple and pear scented spirit. A sherry cask wrapped the soft spirit in dried fruit and a nutty depth. Mid age brings a deeper honey and a riper orchard fruit. The cool, high Highland climate gives a slow, even maturation. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond. Tomatin stands at over three hundred metres, among the highest in the land. An old cattle drovers' road ran through Tomatin, and whisky was made here long before the distillery. The arrival of the Highland Railway in the 1890s made the distillery possible.

    At 46% it is supple and fruity. A soft, fruity sweetness, and the Moscatel brings grape, honey and a floral lift. A dried fruit and a soft oak give it depth. Apple, honey and a soft oak see out the finish. This is a mellow Highland single malt from near Inverness.
