    A distillery bottling of Tomatin, a 10 year old Highland malt and bottled at 43%. Set in the Highland hills south of Inverness, Tomatin has made single malt since 1897. The distillery was founded in 1897 by a local company, taking its name from the village, Gaelic for hill of the juniper.

    The spirit was made in copper stills from unpeated barley, for a fruity, mellow make. It rested in ex-Bourbon oak for a honeyed sweetness. At this age the spirit is fresh and fruity, apple and pear bright. Dunnage and racked warehousing on site gives a steady maturation. The distillery sits beside the A9, the old road north to Inverness. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond. Tomatin stands at over three hundred metres, among the highest in the land. An old cattle drovers' road ran through Tomatin, and whisky was made here long before the distillery.

    At 43% it is gentle, fruity and mellow. Pear, honey and a malty note, and vanilla and a soft oak come from the bourbon wood. A dried fruit and a soft oak give it depth. Apple, honey and a soft oak see out the finish. This is a mellow Highland single malt from near Inverness.
