Description
An official Lindores Abbey single malt, bottled at 49.4%. Founded in 2017 by Drew and Helen McKenzie Smith, Lindores Abbey distils where a monk made aqua vitae for the king in 1494. Lindores also makes Aqua Vitae, a botanical spirit after the kind of drink the monks once distilled.
The spirit was made in copper pot stills from barley grown on the abbey grounds, for a rich, fruity young spirit. It was matured in ex-Bourbon oak, lending vanilla, orchard fruit and butterscotch. The cool Fife climate gives a steady maturation by the Tay. The whisky is bottled on site at Newburgh to keep transport low. A young distillery, it leans on active casks to bring its whisky to life quickly. The house style is layered and fruity, richer than a typical light Lowland. The Casks of Lindores range shows the spirit in bourbon, sherry and STR red wine wood. The abbey ruins still stand beside the modern distillery buildings.
Undiluted at 49.4%, it is powerful. The ex-Bourbon lends vanilla, orchard fruit and butterscotch. It is fruity and bold, the spirit and oak well matched. A warming, fruity finish lingers. This is a layered young single malt from Lindores.
