Description
This official Lindores Abbey single malt, bottled at 49.4%. A release of 11000 bottles. Lindores Abbey Distillery opened in 2017 beside the abbey ruins where Scotch whisky was first written of in 1494. The Tironensian abbey was founded in 1191 on the banks of the Tay, and welcomed kings for centuries.
Distilled on water from a borehole the monks first dug, building the layered Lindores style. It rested in ex-Bourbon oak for a honeyed, fruity sweetness. A young distillery leans on lively casks, the wood shaping much of the flavour. The late Dr Jim Swan shaped the cask policy, with his signature recharred red wine barriques. Barley is grown on the abbey land and water drawn from a borehole the monks first dug. The first single malt, MCDXCIV, the Roman numerals for 1494, was released in 2021. The Tironensian abbey was founded in 1191 on the banks of the Tay, and welcomed kings for centuries. Lindores also makes Aqua Vitae, a botanical spirit after the medieval water of life.
At its natural 49.4% it is concentrated. The ex-Bourbon lends vanilla, orchard fruit and butterscotch. A baked apple and a warm spice lift it. Stone fruit and butterscotch draw out the close. This is Lindores Abbey's young Fife whisky.
