Description
Bottled by the Scotch Malt Whisky Society as cask 5.72 from 1990 vintage Auchentoshan, with 232 bottles distributed to members across the European market at cask strength of 57.1%. The Society identifies each release by a numerical code rather than the distillery name, with Auchentoshan listed as distillery 5 in the Society's archive.
Distilled in 1990 from 100% unpeated malted barley with Loch Cochno water from the Kilpatrick Hills, the wash was fermented around 62 hours in a mix of Douglas fir and stainless steel washbacks. Auchentoshan triple distils every drop through three copper pot stills, with the intermediate and spirit stages lifting cut to around 81% ABV. The extra copper contact strips sulphur compounds and heavy fusel oils while concentrating light esters such as ethyl hexanoate and isoamyl acetate, leaving a delicate spirit filled into a single ex Bourbon American oak cask.
Twenty nine years in temperate Lowland maturation drove patient oak extraction. Lignin breakdown released vanillin, cis and trans oak lactones added coconut and sweet wood, and char layer interaction produced furfural with Maillard derived caramelised sugars. Holding 57.1% across nearly three decades indicates a tight cask with low evaporative loss, with tertiary stage ester transformation layering polished fruit over the spirit's signature citrus and almond core.
