Auchentoshan Valinch 2011

Bottled by Auchentoshan in 2011 as a no age statement Valinch release at cask strength of 57.5%, distributed to the Netherlands market. The Valinch series presents distillery direct cask strength releases drawn straight from the dunnage warehouses at Dalmuir, with the valinch name referring to the long copper tube used to draw spirit samples from casks for tasting.

Distilled at Auchentoshan from 100% unpeated malted barley with Loch Cochno water from the Kilpatrick Hills, the wash was fermented around 62 hours across Douglas fir and stainless steel washbacks before triple distillation. Auchentoshan runs every drop through three copper pot stills, with the intermediate and spirit stages collecting at around 81% ABV. The extra copper contact strips sulphur compounds and fusel oils while concentrating ethyl hexanoate, isoamyl acetate, and other light esters, giving a clean spirit base filled into ex Bourbon American oak.

The ex Bourbon maturation drives lignin breakdown for vanillin development, with cis and trans oak lactones building coconut and sweet wood and char layer interaction producing furfural and Maillard derived caramelised sugars. Held at 57.5% cask strength, ester development layers fresh fruit over the lighter triple distilled spirit base, with the high copper contact in production cleaning out sulphur compounds and fusel oils that would otherwise mute the underlying citrus and almond signature.
