Port cask finishing has been part of Arran's repertoire since the late 1990s, when the distillery began experimenting with secondary maturation as a means of adding depth to its still young spirit inventory. The current Port Cask Finish is one of several wine cask expressions retained as a permanent or recurring product line through successive range refreshes. Bottling for European market distribution, sitting alongside the Sauternes and Amarone finishes within the wine cask programme.
After primary maturation in first fill ex Bourbon American oak barrels, the spirit is transferred into casks previously used for the maturation of Port wine in the Douro Valley of northern Portugal. Port casks are typically larger pipes constructed of Portuguese or French oak, with the wine itself fortified during fermentation with grape spirit to produce its characteristic sweetness and structure. Bottled at 50% with no chill filtration and no colour added.
Port wood imparts a distinct flavour signature derived from anthocyanins and tannins absorbed from the red grape wine during seasoning, alongside residual sugars and the fortifying spirit's higher alcohols. These combine with the Bourbon underlay to produce a recognisable Port finish profile: red berry compote, dark chocolate and a soft drying tannic structure on the finish. The 50% bottling preserves the heavier fatty acid esters that carry textural weight.
