Description
Cask 6981 belongs to Signatory Vintage's Cask Strength Collection 1995 Glenrothes batch, with founder Andrew Symington selecting from his Edradour warehoused stocks for the Symington's Choice tier. Bottled in 2023 at 55% from a single Oloroso butt, the 533 bottle outturn was released into European markets. The cask presents with a noticeably different flavour profile than its sibling 6979 and 6980 casks despite identical filling date and stock conditions.
Twenty eight years in a single Oloroso butt sits at the productive crossover from active maturation to long extractive territory. The cask's first fill activity is well developed but not yet exhausted, with European oak's slow lignin breakdown delivering syringaldehyde, vanillin and eugenol alongside hemicellulose's furfural and hydroxymethylfurfural. The residual Oloroso sherry's sotolon and oxidised aldehydes contribute the savoury walnut backbone that distinguishes long aged sherry from shorter maturations.
The nose lifts old wood resin and dark chocolate with sherried sweetness threading underneath, cooked and fresh fruit appearing alongside a polished oak grip. The palate moves through raisin, fig and developing rancio, with cocoa nib bitterness emerging mid palate as European oak tannins assert themselves. The finish is long, tannic and slightly resinous, the cask holding the spirit's Speyside fruit in tight balance against accumulated oxidative chemistry.
