Description
Cask 9812 belongs to Signatory Vintage's Symington's Choice tier within the Cask Strength Collection, a range curated by founder Andrew Symington from stocks held at the firm's Edradour warehousing. This Glenrothes was distilled in 1997 and bottled in 2024 at 52.4% from a single Oloroso butt, with 612 bottles released into European markets. The relatively soft cask strength after twenty six years suggests the cask ran in higher humidity warehousing or sat in a position favouring water rather than alcohol evaporation.
Twenty six years in a single Oloroso butt sits past the productive sherry midpoint and into long extractive territory. By this point in maturation the cask's first fill activity has tapered, with secondary extractions of slowly cleaved lignin (yielding syringaldehyde, vanillin and eugenol) and hemicellulose breakdown (furfural, hydroxymethylfurfural) leading. European oak's ellagitannin signature has structured itself through into the spirit, and the residual Oloroso sherry's sotolon and oxidised aldehydes provide the savoury walnut backbone.
On the nose, greenhouse fruit and citric lift sit alongside the coal gas note that signals long oxidative ageing in sherry wood. Dried fruit threads underneath: fig, raisin and date, with a polished oak balance. The palate moves through chocolate orange and walnut, the 52.4% strength giving the cask weight without harshness. The finish runs long and slightly briny, with the European oak tannin holding the spirit's Speyside character in check rather than overwhelming it.
