Description
The Uncharted Whisky Co. is the project of Jack Breslin and Dana de Vos, working out of Fintry north of Glasgow. They release in tiny batches, with the rule that both founders have to love a cask before it gets bottled. Their distinctive fluted decanter is the constant; the liquid changes with every release. Whole Lotta Rosé is one of the Bunnahabhain Staoisha bottlings, heavily peated spirit drawn from a first-fill red wine barrique. Distilled 2019, bottled February 2026, 590 bottles at 55% ABV. Staoisha is the trade name used when Bunnahabhain's heavily-peated spirit is sold into the independent market. Same liquid as Mòine, different label convention. The maturation here is full-term in a fresh red wine barrique, the smaller 225-litre Bordeaux-shape format, rather than a finishing pass. With seven years of spirit-on-wood contact in an active cask of that size, the wine influence runs through the entire maturation rather than sitting on top of an existing bourbon profile. The bottler describes the resulting whisky as carrying a natural rosé hue drawn directly from the wood. The cask transforms Staoisha's typical kippery, ashy peat into something sweeter and fruit-driven. Summer berries, raspberry and red plum sit alongside the smoke; oak spice from the active barrique adds a peppery midpalate; the heavy peat backbone keeps the structure from going candy-sweet. The bottler doesn't name the specific grape, but the rosé colour and bright fruit profile point to a lighter red rather than a structured varietal like Cabernet or Tempranillo. Natural colour, non-chill-filtered, single cask.
