Zubrowka Czarna comes from Polmos Białystok, a Polish distillery with deep roots in the country's vodka tradition. It starts from 100% Polish grain, fermented and distilled into a clean spirit, then passed through activated charcoal made from oak grown in the Białowieża forest. Charcoal filtration works by pulling out fusel oils and rougher congeners, which is what gives this bottle its notable softness. What sets it apart is the next step: the spirit is rested in oak barrels, so it picks up a faint vanilla and caramel character before being reduced to 40% for bottling.
The nose leads with vanilla, oak and caramel over a hint of roasted grain. The palate is soft and creamy with a mild sweetness and gentle wood, and the finish is long with a light spiciness. Because it carries real barrel notes, treat it like a brown spirit and build a Vodka Old Fashioned: stir the chilled vodka with a teaspoon of sugar syrup and two dashes of aromatic bitters over a large ice cube, with an orange twist to lift the caramel.
