Zind is Domaine Zind-Humbrecht’s Chardonnay-led white, rounded out with Alsace Auxerrois. Because Chardonnay is not allowed in the appellation it sits as Vin de France, biodynamically farmed, showing ripe pear, white peach and a nutty, textured palate.

Description
Zind is the house white of Domaine Zind-Humbrecht, built mainly from Chardonnay with a supporting share of Auxerrois. Chardonnay is not permitted under AOC Alsace, so the wine is labelled Vin de France, but it is grown and made with the same biodynamic care the estate applies across its complex range of soils. The two grapes play complementary roles: Chardonnay gives structure and a citrus core, while Auxerrois, an Alsace speciality, adds roundness, a softer acidity and a gently nutty weight. The estate ferments with native yeasts and matures the wine in older, neutral vessels, so oak adds no obvious flavour and instead lets contact with the fine lees build texture and a subtle bready depth. The colour is bright straw gold. The nose shows ripe pear, white peach and melon with a honeyed, almond edge. The palate is medium bodied and textured, the fruit ripe but carried by fresh acidity into a clean, faintly saline finish. This is a versatile food white rather than a wine for the cellar. Serve at 10 to 12 degrees.

A flexible table white for roast chicken, grilled white fish and creamy gratins. The nutty, textured palate also flatters hard cheeses such as Comté and aged Gruyère.
