Zignum Mezcal Joven is an unaged Espadin mezcal from Tlacolula de Matamoros, Oaxaca, made at Casa Armando Guillermo Prieto, the largest distillery in the state, in a modern facility that leans on solar power and sustainability. It offers a contemporary, accessible reading of mezcal aimed at newcomers as much as traditional drinkers.
The production departs from custom: rather than roasting the agave in underground pits, Zignum steam cooks it in an autoclave, the method used for tequila, so the spirit does not pick up the heavy smoke of small palenque mezcal. The nose shows earthy, lightly smoky notes with fresh herbs and citrus, while the palate is soft and balanced with a clear agave character, subtle pepper and a mineral tone. At 40% it reads smooth and clean, an approachable joven rather than a rustic one.
