Description
Yuu Baal Mezcal Tobalá is produced in San Juan del Río, Oaxaca, in collaboration with local mezcalero Isaías Martínez Juan as part of the Yuu Baal production network. Rather than operating a single central distillery, Yuu Baal works with small-scale, traditional producers across Oaxaca, preserving local production methods while providing access to wider markets.
This expression is made exclusively from wild Tobalá (Agave potatorum), a slow-growing agave prized for its naturally aromatic and elegant profile. After harvest, the agave is pit-roasted using traditional underground ovens, then processed and distilled using artisanal methods under the direction of the mezcalero. Following distillation, the mezcal is rested for 12 months in glass, allowing the spirit to settle and integrate without any influence from wood.
The resulting mezcal shows wild flowers, smoked wood and stone on the nose, followed by vanilla, clove and orchard fruit notes such as peach and apple on the palate. Herbal tones and restrained smoke frame the agave character rather than overpower it. This is a classic Tobalá expression that prioritises purity, balance and regional identity over intensity, best enjoyed neat.
