Yuu Baal Espadin Reposado is a reposado mezcal made from Espadín by mezcalero Isaías Martínez Juan in San Juan del Río, Oaxaca. The brand name joins the Zapotec words for earth and fire, and this bottling sits as a gentler aged option for drinkers who find añejo mezcal or tequila too heavy on wood.
The agave, around seven years to maturity, is harvested with machete and coa, roasted in a concave stone oven, then crushed on a stone tahona, which gives a rounder, more textural mouthfeel. After natural fermentation in pinewood vats and double distillation, the spirit rests six months in American white oak. The wood lends a touch of caramel and baking spice over the roasted agave and discreet smoke, with citrus and soft oak across a full, supple palate. At 40% it drinks smooth and approachable.
