Description
Yuu Baal is a producer group across San Juan del Río, San Luis del Río and Miahuatlán in Oaxaca, the name joining the Zapotec words for earth and fire. This añejo is built from Espadin, Agave angustifolia, cut by machete and coa after roughly seven years of growth and made by mezcalero Isaías Martínez Juan in San Juan del Río, Tlacolula.
The hearts are cooked in a concave stone oven, crushed on a stone tahona and fermented naturally in pinewood vats before a double distillation. The spirit then rests twelve months in American white oak, a production run of three hundred and ninety five days from cut to bottle. That maturation lends the golden colour and a sweet caramel character, with source notes describing dried fruit, a classic smoke note and smoked vegetal tones over a harmonious palate of restrained oak, caramel, smoke and dried fruit. Bottled at 40%.
