Description
Yoyo, the project of Laurence Manya-Krief, makes KM 31 in Banyuls-sur-Mer, in the Languedoc-Roussillon, from Grey Grenache with a little Red Grenache and Carignan. She farms seven hectares of very old Grenache and Carignan vines, some over a hundred years old, organically and worked by hand with horse or mule. The vineyards sit on the steep slate terraces above the Mediterranean, where sea breezes and altitude keep the wine fresh and lend a saline edge, while old bush vines concentrate the fruit. Grey Grenache is a pale-skinned mutation, so this is a light, almost rosé-toned red with little colour and gentle tannin. It is a natural wine, made with minimal intervention, and aged seven months in French oak, which adds a little air and texture while keeping the fruit fresh and the profile delicate. The colour is pale ruby. The nose is perfumed, with red berries, cherry and white peach over dried herbs, pepper and a briny note. The palate is light and fresh, supple and savoury, with soft tannin and a saline, mineral finish. Serve at 13 to 15 degrees, lightly chilled. It suits charcuterie, pork, salads and white fish.
