Description
Yoowe Palmilla is a sotol made in the traditional way from one hundred percent Dasylirion, the desert spoon, a high desert plant that is not an agave and not a mezcal. The bottling uses Dasylirion wheeleri, the most common sotol species, drawn from the same northern Mexican tradition that also yields the bacanora in the Yoowe range.
Like most sotol, the Dasylirion hearts are roasted, milled, fermented and double distilled, the wheeleri species typically giving a forest and high desert profile of pine, green herbs and cool menthol minerality. Here that shows as fresh mint and grass on the nose, then a grassy, minty palate carrying a defined warmth and spice that the maker calls typical sotol. Bottled at 48.7 percent, it stays unaged to keep the plant and the desert front and centre.
