Yllera makes this Castilla y Leon red from Tempranillo with Syrah and Cabernet Sauvignon, grown on vines of fifteen to twenty years. Twelve months in French and American oak and a year in bottle give red fruit, vanilla and cocoa over a savoury, spiced frame.
Description
Yllera produces this Crianza in Castilla y Leon from a blend of Tempranillo, Syrah and Cabernet Sauvignon, drawn from vineyards of fifteen to twenty years of age on the continental plateau. The dry, sunny days and cold nights of this high inland country ripen the fruit fully while preserving the acidity and freshness that keep the wine balanced. The grapes are picked by hand into small containers and double-sorted, in the vineyard and at the winery, then destemmed and fermented at a controlled 28 degrees over three weeks in stainless steel, where malolactic fermentation also takes place to convert sharp malic acid into softer lactic acid and round the texture. Ageing runs to 12 months in French and American oak followed by a year in bottle, the two oak types adding both the cedar and spice of French wood and the coconut and vanilla of American, while the bottle rest settles the wine before release. It shows red fruit and ripe plum on the nose over vanilla, cocoa and sweet spice. The palate is medium-bodied and smooth, the tannins supple, closing on a savoury, oak-touched note. Serve at 16 to 18 degrees. A versatile partner for roast meats.
