Yamazaki 35 Years Old is a single malt of considerable age from Suntory's distillery in Shimamoto, Osaka Prefecture, the valley where three rivers meet and humid air aids maturation. Bottled in 2006 by Japan's oldest and largest whisky house, it sits at the rarest end of what the distillery has ever offered and reflects more than three decades of patient ageing.
The whisky matured in a second fill Spanish oak sherry butt, a gentler cask that lets long years build depth without smothering the spirit. The result leans into dark chocolate and sherried dried fruit, framed by the distillery's orchard fruit and a warm, resinous oak. At 43% it is rounded and contemplative, the kind of mature sherried Yamazaki that has become almost impossible to find.
