This is Yamazaki at 25 Years Old, the long aged peak of Suntory's Osaka Prefecture distillery, Japan's first malt site, where soft humidity in the Shimamoto valley shapes a quarter century of slow maturation. Bottled in 2021 for a global audience, it sits at the top of the core range above the 12 and 18, a benchmark for aged Japanese single malt.
Maturation drew on Japanese mizunara, American oak and Spanish oak, a marriage that defines the house at its oldest. Mizunara is the porous, slow giving Japanese oak that lends a signature sandalwood and incense note with long ageing, and here it threads through dark chocolate, dried fruit and deep orchard fruit. Soft and rounded at 43%, it shows the layered, contemplative character Yamazaki builds across decades in wood.
