Description
Yamazaki is Japan's first malt whisky distillery, set in the Shimamoto valley of Osaka Prefecture where the Katsura, Uji and Kizu rivers meet and soft humidity feeds maturation. This 1990 vintage, distilled by Suntory and drawn at 18 Years Old from a single cask, is a snapshot of the house at full strength rather than the rounded core range, bottled in 2008 for a global audience.
Maturation took place entirely in a Spanish oak Oloroso sherry butt, the wood that gives Yamazaki its darker register. At 60% and undiluted, it carries dried fig and raisin, bittersweet chocolate and a dusting of clove, all resting on the distillery's signature orchard fruit and a faint resinous depth. Concentrated and slow to open, it rewards a little water and patience in the house style.
