Description
This 1993 Yamazaki was distilled by Suntory at its Osaka Prefecture distillery, the first malt site in Japan, where the damp Shimamoto valley between Osaka and Kyoto pushes maturation along. Drawn from a single cask at 13 Years Old and bottled in 2006 for the Japanese market, it is an undiluted look at the distillery away from its softer core range.
Maturation was in an Oloroso sherry butt, the wood behind Yamazaki's darkest, fruitiest character. At a powerful 62% it pours thick with raisin and dried orange peel, dark chocolate and warm baking spice, with the distillery's orchard fruit pressed beneath the sherry. Big and mouth filling, it asks for a drop of water to settle the heat and unfurl its layers, the depth of an active sherry butt showing clearly in the house style.
