Description
This 1994 Yamazaki was distilled by Suntory at its Osaka Prefecture distillery, the oldest malt site in Japan, set in the Shimamoto valley between Osaka and Kyoto. Bottled in 2006 at 12 Years Old as a single cask for an event, it shows the lighter, American oak side of the house rather than its sherried register.
Maturation took place in a single American oak barrel, the wood that lets Yamazaki's orchard character lead. At a moderate 50% it is bright and rounded, offering vanilla and sweet coconut, ripe pear and a soft malty base, with a clean gentle oak finish. Easygoing for a single cask bottling, it captures the distillery's fruit forward style at an approachable strength, the American oak adding sweetness without ever crowding the spirit.
