XILA Mexican Aperitif, pronounced Shila, is an agave liqueur built on 100% Espadin agave that is traditionally roasted, fermented and distilled before being flavoured. It is the work of a women led distillery and draws its inspiration from the cultures of Oaxaca and Puebla, marrying the agave character of Oaxaca with the spice of Puebla ancho chilli. At 20% it is gentle enough for newcomers while still rewarding seasoned agave drinkers.
The base spirit is aromatised with seven botanicals, caramelised pineapple, hibiscus flower, lavender, ancho chilli, cinnamon, cloves and black pepper, giving a profile that balances sweetness, warming spice and a quiet bitter edge. As a liqueur it carries added sweetness by design. It is versatile served neat, over ice or as the base of a cocktail, and works well lengthened with dry vermouth and tonic as a spritz.
