Description
Xiaman, pronounced shaman, is a strictly artesanal mezcal from the high country of Oaxaca, an ensamble cooked, fermented and distilled from equal parts Tepeztate, Agave marmorata, and classic Espadín, Agave angustifolia. Pairing a slow wild maguey with the cultivated workhorse gives the bottling both the green, herbal intensity of Tepeztate and the balanced sweetness of Espadín.
The agaves are selected and cleaned by hand, then roasted in hand-built earth ovens fired with local wood, the pit roast that carries the spirit's smoke. The juice ferments naturally on the palenque's own yeast before distillation, with the first litres poured onto the ground as a ritual offering. At 44% the result is aromatic and layered, black pepper and ripe pear lifted by blossom honey and fresh mint, all of it wrapped in campfire smoke.
