Description
This Albariño is the personal project of José Manuel Domínguez, a third-generation farmer working in his home village of Sanxenxo in the Valle del Salnés, the coolest and most maritime corner of Rías Baixas in Galicia. He planted the vineyard himself using an old albariño clone and farms it naturally and organically on a granite plot. Granite bedrock and the Atlantic influence define the wine: the free-draining soil and the salt-laden coastal air give Albariño here its saline grip and bright acidity, while cool, damp conditions keep the fruit fresh and slow ripening. After a gentle pressing the wine is aged for around eight months split between stainless steel and barrel, which adds a little texture and breadth without covering the fruit or the site's minerality. It pours pale with green highlights. The nose is citrus-led, with lemon, green apple and white peach, lifted by white flowers and a clear saline note. The palate is dry and structured, the acidity firm, and the finish carries a briny, mineral length typical of Salnés. Serve at 9 to 11 degrees.

Made for Galician seafood: serve with steamed clams, grilled prawns or a plate of oysters, where the saline edge and lemon acidity do the work of a wedge of citrus. It also handles richer fish such as grilled mackerel or hake in a herb sauce.
