Wolfburn Single Cask Release 6 Years Old 2014

A Wolfburn single malt, a 6 year old from 2014, cask 888, bottled at 54%. Wolfburn is a far north craft distillery at Thurso in Caithness, working by hand since 2013. Wolfburn distils, matures and bottles all on its one small site at Thurso.

Distilled slowly on soft Wolf Burn water, giving the clean, fruity coastal spirit. A sherry cask wrapped the light spirit in dried fruit and a nutty depth. Mid age brings a deeper honey and a riper coastal fruit. The light, clean make takes cask character readily across maturation. It is the most northerly distillery on the Scottish mainland, a stop on the North Coast 500. Everything here is done by hand, from milling to bottling, the mark of a true small distillery. Most of the make is unpeated, with a lightly peated malt distilled since 2014 for a soft smoke. The core range runs Northland, Aurora, Morven and Langskip, names drawn from the far north.

At cask strength 54% it is muscular yet fresh. Apple, citrus and a clean malt, and the Oloroso brings dried fruit, fig and a nutty depth. A vanilla and a sea air note give it lift. Apple, honey and a sea air lift see out the finish. This is a fresh, maritime far north single malt.
