    A Wolfburn single malt, a 4 year old from 2015, cask 86/15, bottled at 57.3%. Just 318 bottles were filled. Wolfburn is a far north craft distillery at Thurso in Caithness, working by hand since 2013. The core range runs Northland, Aurora, Morven and Langskip, each named for the far north.

    Distilled slowly on soft Wolf Burn water, giving the clean, fruity coastal spirit. Ex-Sherry wood added a dried fruit richness to the fresh make. Still young, it is fresh and fruity with a coastal lift. Hand filled and hand bottled, each cask is followed closely from fill to glass. Most of the make is unpeated, with a lightly peated malt distilled since 2014 for a soft smoke. The core range runs Northland, Aurora, Morven and Langskip, names drawn from the far north. The Kylver Series gathers single casks named for the runes of an ancient Caithness stone. Water is drawn from the Wolf Burn, the stream that runs past the distillery to the sea.

    Undiluted at 57.3%, it is powerful. Apple, citrus and a clean malt, and the Pedro Ximenez lends raisin, date and treacle. It is fresh and fruity, the fruit and oak well matched. The finish is bright, fruity and coastal. This is a bright young single malt from Caithness.
