A young Panamanian from Germany’s Windspiel Manufaktur finished in Pedro Ximenez casks, unsweetened and bottled at 40.5%, the PX wood lending dried fruit and sweet spice to a soft column-distilled base.
Description
Windspiel Manufaktur PX Cask is a young Panamanian rum, around four years old, finished in Pedro Ximenez sherry casks by the German producer Windspiel. The record lists it as unsweetened, so its richness comes from the cask rather than added sugar.
Built on a molasses Panama base, where the column still gives a clean and mellow spirit, and bottled at 40.5%, it should show soft vanilla and caramel lifted by the PX casks into raisin, dried fig and sweet spice. Despite the dessert-like wine wood, the dry framing keeps it honest, a sherried young ron that leans on cask character rather than dosage.
