Description
North Star Spirits is the Glasgow independent founded by Iain Croucher, a modern single-cask label. Filled in 2012 and bottled 2023, the whisky is a 11 year old Williamson. Williamson is the code for teaspooned Laphroaig: add a spoonful of another malt to the cask and it must be sold as a blended malt rather than under the distillery name. The name nods to Bessie Williamson, Laphroaig's mid-century owner.
A turn in Pedro Ximenez over eleven years folds the wine cask through peat heavy with tar and brine.
Bottled at cask strength, 56.4%, the Pedro Ximenez brings raisin, date and treacle. On the palate, chocolate, dried fruit, a leafy lift, a malt note, a medicinal edge, a solvent note.
