Williams and Humbert’s Fino en Rama Campanillero comes from Palomino Fino aged eight years under flor and bottled unfiltered. From Jerez albariza, it is bone dry and intensely saline, with almond, green apple and bready yeast.
Description
Williams Fino en Rama Campanillero 2012 is a Jerez sherry from Williams and Humbert, made from Palomino Fino grown on the white albariza chalk of the Marco de Jerez. This soil stores winter rain deep below the surface and reflects the summer heat, ripening Palomino at moderate sugar and keeping its acidity intact. The wine is fortified to around 15 percent and aged for eight years under a continuous veil of flor, an unusually long biological ageing for a Fino. The yeast film consumes oxygen and acetaldehyde, holding the colour pale and the aromas fresh, while years under veil add depth, bitter-almond character and a saline grip. En rama means it is bottled with little or no filtration and close to its state in the cask, so texture and aroma carry through more completely. Expect a pale straw colour, a sharp, yeasty, saline nose with green-apple lift, and a bone-dry, bready palate of notable length. Serve well chilled at 7 to 9 degrees in a white-wine glass, freshly opened, as an aperitif or with seafood.
