Williams and Humbert’s Fino en Rama Alboreá is Palomino aged nine years under flor and bottled unfiltered. From Jerez albariza, it is bone dry, deeply saline and bready, with almond and green-apple sharpness.
Description
Williams Fino en Rama Alboreá 2012 is a Jerez sherry from Williams and Humbert, made from Palomino grown on the albariza chalk of the Marco de Jerez. The pale soil holds winter moisture in reserve and reflects the strong Andalusian sun, ripening Palomino at moderate sugar while preserving freshness. Fortified to around 16.8 percent, the wine is aged for nine years under a continuous veil of flor, a long biological maturation for a Fino. The flor metabolises oxygen and acetaldehyde, keeping the colour pale and the aromas fresh while adding bready depth, bitter-almond character and a marked saline grip across nine years under veil. En rama means it is bottled with minimal filtration, close to how it sits in the cask, so more of the cellar's texture and aroma reach the glass. Expect a pale straw colour, a sharp saline and yeasty nose with green-apple lift, and a bone-dry, savoury palate of real length and intensity. Serve well chilled at 7 to 9 degrees in a white-wine glass, freshly opened. It belongs as an aperitif or with seafood.
